Mexican Grilled Corn

Spice up your corn with this Mexican Grilled Corn recipe for your next camping trip!
Ingredients
Vegetable oil for brushing
1 tsp chili powder
½ tsp cayenne powder
8 corn, husked
¼ cup mayonnaise or unsalted butter
½ cup of crumbled cotija cheese, Parmesan or ricotta salata
1 lime cut into 8 wedges
Instructions
Build a medium-hot fire in a charcoal grill or heat a gas grill to high. Brush grill grate with oil.
Combine chili and cayenne powders in a small bowl.
Grill corn turning occasionally with tongs, until cooked through and lightly charred, about 10 minutes.
Remove from grill and immediately brush each ear with 1 1/12 tsp mayonnaise or unsalted butter.
Sprinkle each corn with 1 tbsp cheese and a pinch of chili powder mixture, then squeeze 1 lime wedge over each corn.
Another option is to put all of the ingredients out separately and let your family top the corn as they wish.
